One year ago in January 2023, my husband and I decided to try going plant-based and alcohol-free for one year. Now one year later, the transformation this decision made in our lives has been amazing. There is definitely no going back. What we did not realize is how much we were suffering from fatigue, inflammation and lack of clarity and motivation. Once we literally came out of the fog, we realized some of our eating choices and alcohol habits were holding us back from becoming the best version of ourselves. Sunday Meal Prep Day: Do all your shopping for the whole week and do your meal prep on Sundays to make meals easy and quick while maintaining healthy intentional eating daily. I will include products I love to use, pantry staples, how to save money, and more. Lots of protein sources included!
Sunday: Prep - Greens and Beans Pasta Salad, quinoa, cut up veggies, make protein bars, berry muffins, focaccia dough to rise, overnight oats (3 ways), pickled onions, protein bars, make pizza sauce
Monday:
Breakfast - overnight oats (banana and berry)
snack - protein bar
Lunch - greens and beans pasta salad
Dinner - Lentil soup with focaccia bread
Tuesday:
Breakfast - Protein shake
snack - protein bar
Lunch - lentil soup and pasta salad
Dinner - Cauliflower & tofu burritos with refried black beans, quinoa and guacamole
Wednesday:
Breakfast - overnight oats (peanut butter maple)
snack - protein bar
Lunch - burrito bowls - quinoa, black beans, tomatoes, pickled onions, corn
Dinner - sweet or regular potatoes, roasted veggies, chickpeas, vegan butter and sour cream
Thursday:
Breakfast - toast with nut butter, bananas, berries, chia and honey
Lunch - roasted veggies, hummus on focaccia sandwich
Dinner: Impossible Burgers with pickled onion, avocado, tomato
Friday:
Breakfast - protein shake or overnight oats (peanut butter banana)
Lunch - leftovers of any food still left from the week! We never waste!
Dinner - Plant based pizza night, vegan pizza sauce (white or red), tofu pepperoni (4 different varieties) Pesto, kale, and caramelized onion, red sauce with "cheese" and pepperoni, red sauce with roasted veggies.
Weekend Extras:
Vegan blueberry pancakes, Chili tofu Crunch bowl, Greens Salad with sweet and spicy cashews
